African cacao. Transformed in the South African bush.

Maison 54 is a bean-to-bar chocolate house based in Hoedspruit, Limpopo. We source cacao from distinctive African origins and make chocolate in small batches, with a focus on flavour, traceability and clear ingredient choices.

The name refers to the 54 countries of Africa. A continent of extraordinary biodiversity, nature and culture, whose terroirs we want to reveal and celebrate, and whose stories we want to tell.

Chocolate that begins with the land it comes from.

Grapes have wine. Cacao has chocolate.

As with wine, each cacao bean carries the expression of a place: its soil, climate, altitude, biodiversity, and the care of the people who grew, fermented and dried it. Its potential can be expressed in many ways. It takes curiosity, technical attention and repeated tasting to understand what each origin can become.

But good chocolate should not be only a question of flavour. It should also be made with attention to where it comes from, how value is created, and what kind of agriculture and relationships it supports.

Maison 54 exists at that meeting point: taste, origin, craft and responsibility.

Cacao origins selected with care

We work with cacao whose origin can be clearly named, traced, and understood. We look for beans grown with care for the land, biodiversity, and local livelihoods, while building direct relationships with the people who grow and process them.

Odzala-Kokoua, Republic of Congo

Odzala is the first origin at the heart of Maison 54.

This cacao is grown on the periphery of Odzala-Kokoua National Park: 13,500 km² of equatorial rainforest in northern Congo, home to lowland gorillas, forest elephants, and one of the most intact ecosystems left in Central Africa.

Before founding the brand, Esther worked in conservation. Odzala-Kokoua was where she first stepped into that world. The rainforest and Congolese culture left a deep mark, and are still with her today. Using Odzala’s beans, and by doing so supporting local communities and the landscape they depend on, is a privilege.

Origins in development

Maison 54 is also exploring cacao from Tanzania, Uganda, Madagascar and São Tomé.

Each origin will only become part of the collection if it meets three criteria: the quality of the beans, the integrity of the sourcing, and the flavour of the final chocolate.

We will share more as those relationships and recipes develop.
